I made this recipe and enjoyed it. I saw it in a picture and recreated it. Most of the recipes to make a caprese stack online said to used lemon infused olive oil, this is actually a unnecessary expense I used normal olive oil and a little lemon juice. very simple and delicious. Also I sauteed my asparagus in olive oil rather than steaming it, giving it more flavor
Ingredients:
1 very large, ripe tomato
1 large ball of mozzarella
1 bunch of asparagus
fresh basil
balsamic vinegar
lemon
olive oil
sea salt and fresh ground black pepper, to taste
Directions:
Saute asparagus for 2-5 minutes in olive oil and a little h20. Slice tomato’s about 1/2’ thick then slice the mozzarella the same as the tomato.
Start the stack with the tomato first add a pinch of sea salt and pepper to the tomato, then place the basil on top of the tomato, next the mozzarella. Place another tomato on the mozzarella, then lay the asparagus on top of the mozzarella. Drizzle some extra virgin olive oil on the asparagus then place a slice of mozzarella and basil on top of the asparagus. Top with another tomato slice.
Add drops of balsamic vinegar and drizzle olive oil and a little lemon juice
